- Cut potatoes into 4 or 6 pieces and steam (optional).
- Heat oil in skillet.
- Add chicken strips and cook until dry and a little brown.
- Add salt and black pepper.
- Put chicken in bowl and shred with fork.
- Heat oil in a large pan.
- Add (1 big / 2 small canned) tomato sauce.
- Add salt, black pepper and oregano.
- Add chopped onion.
- Add tomato cubes.
- Add steamed potatoes.
- Add mixed vegetables (optional).
- Serve with rice, bread or tortilla spread with mayonnaise.
